Eating from Street Carts in Egypt
Personally, I've liked most of what I tried from the food carts, except the sweet corn cobs. The corn cobs in Egypt taste terrible to me. An American friend even went so far as to say that what is sold on the street as corn on the cob, would only be used as cattle feed in the USA. There are better versions of corn available in Egypt, but it is mostly found in the frozen section of the supermarket, rather than on the street.
The only thing I would advise a newcomer is : "don't try to eat off a street cart, if you have just arrived in Egypt. Give your digestive system a little time to adjust to change in water, the new surroundings, the new microbes and germs in the atmosphere etc. After that just use your common sense. Most food carts are as hygenic as you can expect in a country like Egypt (or India, where I am from), but if you are particularly put off by the surroundings or hygiene of a particular push cart, then move on. If you see flies hovering around the food, then avoid it completely."
I would also personally avoid anything that is uncovered or not wrapped and being sold at a very dusty or polluted part of the road. Unless it was something that could be washed before eating.

The roasted sweet potatoes are lovely. The white beans (more common in Alexandria) are lovely with a squeeze of lemon (although I often take them home to add a good sprinkle of chilli powder or chaat masala, to further enjoy the flavor). There are many delicious varieties of breads and biscuits sold on carts. The wafers that are sold near the citadel in Alexandria with fillings of sesame seeds, or groundnuts are also very good.
Street food in Egypt is not half as scary for me as street food in South East Asia. At least here, I know what I was getting myself into when I ask for something. :)

Sushi Recommendations in Cairo
Hence I cannot provide a primer on the best sushi in Cairo. But my friend Mona Daoud, loves sushi and this is her list of recommendations for sushi in Cairo.
Jo Sushi on Mohamed Mazhar street in Zamalek has it's on days and off days. Depends on your luck... just make sure to tell them not to use wasabi while preparing sushi for you because they mistakenly think that if they're generous with it, it will taste better.
There's also INakaYa , 6A Midan Aswan in Mohandessin. They have all you can eat nights for 90 LE on Saturday, Monday and Wednesday. I haven't tried them though, so I'm not sure if they're good. I only heard about them.

Bakery @ Flamenco Hotel
@ Golden Tulip -Flamenco Hotel

A German friend of mine, Gertrud recommended this bakery very highly for their German breads and desserts. She felt their authenticity could be credited to the fact that the GM, Mr. Groebel and his bakery chef are both Germans.
The items she recommended to me were the Brezen-stick (stangerl) and rolls and apple pie (not so sweet) and Zopf (like brioche) and the real German dark bread.
Since I was looking for Multigrain bread for my husbands strict diet, I decided to stop here and check it out.Read my entire review n my restaurant review blog.
Chinese New Year & Cooks Day off at CSA
In honor of this, there was a mini Chinese bazaar at the CSA yesterday. Some interesting Chinese food items from an embassy consignment like red beans flavored noodles and other hard to find Chinese ingredients were on sale.
There was also a stall by China Treasure which offers a selection of interesting curios from China.
There was also some home cooked Chinese food including dumplings, stir fried vegetables and meat in sauces. Some food was being prepared hot on site, including pan fried dumplings, Chinese stuffed bread (like parathas) and kebabs.
Yesterday was also Cooks day off, which is held every Thursday & Sunday between 9am & 1pm on the premises. Normally the food on offer is of the home cooked variety and more reasonable than restaurant food. Over the last few months I have seen Egyptian, Indian, Brazilian, Phillipino, Italian among the variety of cuisines on display.
From past experience, some foods keep well in the fridge for a couple of days, but some of them have to be eaten the same day as the food is packed very fresh and without preservatives.
Sabudana + Garam Masala in Cairo
Garam Masala being sold is from the Raj Masala brand.
The Sabudana is a South East Asian brand, it is sold as Tapioca Pearls. There are 2 sizes available. One is the small size that we use in Indian cooking and one is a much larger size, like groundnuts/peanuts/moongphali.
They are on the expensive side comparing to their price in India, but they ARE available if you need to replenish your stock.

Strawberries in the market
There were some unusually shaped ones too.
Strawberry milk shakes, strawberry smoothies, strawberries and cream, strawberry shortcake - we are having a feast!
I've been told that with baladi strawberries, it is hit or miss, so ask for as taste from the lot (and choose one yourself) before packing some to bring home.

Cakes and Cookies from Hope Village Society in Cairo
Not only is this a worthy cause, but their cakes are truly awesome.
I've tried their Lemon Cake (from 10LE - 20LE depending on size) and Coffee Cake (15LE).
The best of their baked goods that I have tasted so far are the oatmeal chocolate chip cookies (20LE for a dozen) These are some of the best cookies that I have eaten in Egypt.

European Embassies Christmas Bazaar at the Nile Hilton
We reached about 11am and the place was overflowing. We were wondering what the rush was about, as we haven't seen such crowds at any of the previous bazaars that we have attended in Egypt. People had even come with strolleys and suitcases.
When we went in, we figured that a large majority of the crowd was there to buy the alcohol that was freely available. A lot of embassies had their countries traditional alcohol on offer: Russian vodkas, Pimms from UK, Irish Whiskey, Gordons Gin, the range was much wider than you would ever see in the Duty Free Shop in Egypt. Prices were a little higher than the Duty Free Shops. We did not pick up any alcohol as we travel frequently between the 2 of us and normally bring our legally allowed limit in with us. But a lot of people were stocking up for the holiday season.Alcohol was just the surface of the goods on offer. Traditional foods, home baked goodies, snacks on site, traditional embroidery, crystal, jewelry, souvenirs. All these were in plenty.
We picked up some Croatian pasta sauce which I have yet to try and fresh chocolate cake from Greece. The cake we got was charred on the bottom, and more like a chocolate flavored bread.On location we had a European Union brunch ranging from cheese toast from Holland to crepes, waffles, Hungarian Goulash and Slovenian burgers, British Pimms based punch to Irish coffee. The Swiss cheese Raclette smelt a little too strong for our taste but plenty of people were enjoying that with potatoes and gherkins.

and there was even a Santa's grotto for the younger ones.
Entry at 20LE was a bit more than most other bazaars, but all the money was being collected for Egyptian charities.An enjoyable start to the day.

Buying Tea Bags in Cairo
Twinnings - the tea bags available here are imported for the most part. So quality is assured.
Ahmad Tea - again imported. Quality good.
Lipton - Both imported and locally prepared tea bags are available. Locally made tea bags for plain tea are pretty decent. The flavored and special teas arent as good as the imported varieties.
Isis - local herbal teas. Good quality. I adore the hibiscus and cinnamon variety which is rarely available. So I stock up when it is available.
Flavored and herbal teas are available in a wide range of flavours.
Locally made tea bags will be much more reasonable than the imported ones. You may need to try which brands are acceptable to you and which ones it makes sense to buy the imported variety or bring them with you from home.
For an idea of prices. A box of 15 hibiscus and cinnamon tea bags by Isis costs 2.95LE.

Hibiscus tea (karkadi) is quite unique to this part of the world and is a nice souvenir from Egypt for a gourmand friend back home.

Buying Garlic Paste in Cairo
Its a bottle of finely minced garlic preserved in a bit of oil and salt. Costs about 5.25LE. . Its handy to have in the fridge for the days when cooking in a hurry.
Buying Rice in Egypt
1. I do not use Egyptian rice for anything except making rice pudding (kheer/ruz bi laban) or risotto because it has a sticky consistency like arborio or sushi rice. This particular rice needs perfection to cook as a side dish for curries, which doesnt suit my touch, taste, see, smell, feel style of cooking
2. To make Indian dosas (rice pancakes of different types) I bring the appropriate rice back from India
3. To make regular rice for daily use, I buy the "Cooker" brand. This used to come in a green topped box, now it comes in a red topped box.
A 2kilo box costs about 26LE. It is also available in 1kilo boxes and also in plastic bags. If you buy a box that isnt dented already, the boxes are very durable and air tight so they can be reused for storing other things at home.

The bottle in front is a current offer at Hyper One where you get a bottle of Crystal hot sauce with a 2 kilo box.

Dusshera/Dashera - Indian Celebrations in Egypt on 10th October

A couple of people had asked me about this last year:
To those who were concerned, at the community gatherings there will be absolutely no religious symbols or ceremonies being performed, it is just the party part of the celebration. Especially since these are not the actual dates of the festivals. So please do not be worried on that issue.
The Dushera function on 10 October is reasonably informal with traditional Indian dance (garba & dandiya) being performed by anyone in the crowd who is interested, the more colorful the clothes you wear the better you will blend in (see poster) There is also a high pre-disposition to wear clothes with mirrorwork on them.
The Diwali function will be a more formal sit down dinner at the Mena House Oberoi, which will also be colorful, but in a more understated way.
Dashera will be all about colors, food, dance and fun. Oh and in the dance, men and women may dance in different circles if they feel more comfortable with that or you can just dance in your own group. Or you can just eat the yummy food from the stalls (there will be non spicy food available) and watch the myriad colors swirl and turn. I personally fall in the second category :)
For those who can't read the poster too well. Entry is 20LE for members and 40 for non members. Kids are at half price. This is just entry charge.
You can sign up for membership on the spot (if you are an Indian or married to an Indian)and avail the discounted membership entry for the function. Membership is somewhere between a 50 and 100LE, but we paid up for a family membership a while ago, so I don’t remember the exact amount.
The admission fee includes admission and a few freebies and the chance to dance, enjoy the music etc. The dandiya sticks you can bring your own, or buy on the spot (which may be expensive, since they have to be imported from India and they are heavy) Food pricing depends on individual stalls, because they can price it to their convenience. A lot of home made Indian food will be on offer. I think last year prices per item started from 15LE. I would roughly say that prices would be similar to anything in a food court in Dandy mall or city stars. The Karvin hotel and the Oberoi hotel might have stalls and they may charge a little higher but not as high as eating at the hotels themselves. I have to highly recommend the jelebis made on the spot by the Oberoi chef if he turns up this year and the motichur laddus that the Alexandria Carbon black group distributed last year (don’t know if they will do it this year too)
Do come along, its pretty informal, you can either mix with the Indian community or stick to your group of friends, we are pretty welcoming of everyone

Wadi Foods

I have been extremely happy with their olive oil selection including the naturally flavored varieties (which come in attractive bottles that look very elegant on a dinner table and can be served as is)

Their olives come in multiple varieties (black, Kalamata & green) and with various pickling spices.

They have excellent capers and sun dried tomatoes too. (tart and firm, not soggy)
The pepper pickles are not as spicy as I (an Indian) would like them, but I have friends who aren't into extremely spicy food, who love these pickles.
Do remember that in a non Indian setting, pickles normally refer to something that has been preserved in brine (salt water with a little souring agent) The cornichons are good and the lime pickle is what we call in konkani -meetha udkache - which means preserved in brine. they also have vine leaves, if you are inspired to create your own stuffed vine leaves at home.They say that, all Wadi Food pickles are handpicked and then processed naturally by curing them slowly without any chemical additives or preservatives. They do taste that way.
They have some excellent tapenades that go well on bruschettas for an impromptu snack or on toast for breakfast. I love the sun dried tomato tapenade the best

They sell ready made pestos (Basil, mixed herb and artichoke) and pasta sauces (Arabioatta, Alfredo, Mediterranea and Basilico) I haven't tried these as I prefer to make my sauces from scratch, so I can tweak the taste to our taste buds. But I did try an onion paste of theirs for marination when I was in a hurry one day and it tasted quite awesome. I don't remember the exact name on the bottle and I haven't seen it recently. Some of their products go off the shelves for a while depending on the seasonal availability of their fresh produce.
The Apple Cider Vinegar may not be the same as the one available in the US, but its quite good never the less and works out much more reasonable and healthy than the imported varieties. The balsamic vinegar is ok for marination, but if the balsamic is to be used as a dip or as the main top note flavor in a dish, then I prefer to use my bottle from Modena.
All measurements on bottles are in the drained weight.

The other advantage of going to their dedicated stores is that you can also pick up organic chicken and organic vegetables grown on their farms along the Cairo Alex desert road.
They also have appropriate baskets for their bottles, which are very handy when you want to take some over as a gift for your dinner hostess. Or you can even carry one of their fancy jars. - My husband is convinced that I buy half the products because of their bottles :) which I love to re-use in different ways.

Feel free to use any of their spice/bottle racks and combine it with whichever bottles you think your hostess may appreciate and create a beautiful basket for yourself. If you fall in love with the arrangement yourslef, just buy 2. I speak from experience :)

What's been happening?
I had a house full of guests. 8 house guests for 2 weeks and 4 house guests for 4 weeks. Making it an average of 8 Indians in the house for a month with most meals being eaten at home.
So do you know what it takes to feed 8 Indians for a month?
35 cartons (35*12 bottles) of 1.5 litre water bottles
35 kilos of vegetables
25 kilos of wheat flour
16 kilos of rice
15 liters of milk
10 kilos of fruit
8 liters of oil
8 kilos of lentils (dhal)
3 kilos of tea
2 kilos of salt
and thereabouts. I have never bought so many groceries in my life!!!
So now you know what kept me busy for the last month :)

Summer Coolers in Egypt

Now that the temperatures are regularly crossing 40C, maybe most of you like me are more interested in consuming cooling liquids and eating light salads.
While the aerated beverages are easy and seem convenient, they are most definitely not the best thing for your family’s health. There are the easy options available like the fresh orange juice sold at Metro (clean & healthy) and the many bottled fruit juices from
Options with a little work involved are milkshakes with Nesquick or Vitrac’s flavored syrups. The almond one is especially yum.
But if you don’t mind putting in a little effort, then there is a vast mouth watering and thirst quenching range of drinks that you can prepare by yourself at home, with ingredients easily available in
Fresh Lime Juice/Lemonade
Squeeze the juice of 5-8 lemons (depending on size) into a pitcher. Discard the seeds. Add sugar and salt to taste. Fill with water. This can be kept chilling in the fridge and consumed over a 24 hour period.
Fresh
Squeeze 2 oranges and strain the juice. Add sugar to taste. Cool in the refrigerator before serving. If you want to drink it really fresh – store the oranges in the refrigerator before squeezing.
Almond Sherbet
Blanch half a kilo of almonds and skin them. Make a thin puree of the nuts in a blender/liquidizer adding a little water if necessary. (You can do this in multiple lots depending on the capacity of your blender)
Make a syrup with quarter kilo sugar (1.25 cups) and one liter water, cooking till it reaches single thread consistency.
Pour the almond puree into the syrup and cook till thickened, taking care to keep stirring.
The syrup should be thick but of pouring consistency.
You can add a teaspoon of rose water at this stage if you like.
Cool and fill into bottles.
It can be refrigerated for 2 weeks.
Serve diluted with water or milk and crushed ice.
Tamarind Juice
Very refreshing in the summers.
Clean 1/4 kg of tamarind, cover it with water (about 1.5 liters) and boil for 5 minutes. Then let it soak in that water for at least 6 hours.
Strain the liquid of any solid pieces. Add 2 cups of sugar.
Bottle & refrigerate.
Dilute with chilled water when you want to drink it.
Home made Karkadih
Rinse ¼ kg dried karkadih. Add one liter water and boil for 5 minutes.
Let it soak in that water for at least 1 hour.
Strain and sweeten with 1 cup sugar.
Bottle and refrigerate.
Dilute with chilled water when you want to drink it.
Lassi
This is a staple in most Indian households during the hot summer months. It cools down the body completely and can be had in sweet or salty versions. There are so many flavors that you can add to the basic lassi. Below are a few versions to get you started.
Whisk together 450ml yoghurt (plain) with 300ml cold water. The consistency should be that of full cream milk. This is your basic lassi.
Flavor with a pinch of ginger or 1 sliced green chilli or cumin powder or a teaspoon of shredded mint or a teaspoon of chopped cilantro. Stir well. You can add salt to taste.
For a sweet version, add sugar to taste (about 1 teaspoon) to the yoghurt and water blend. You can flavor it with a dash of rose essence or orange blossom water.
For a really fancy lassi, garnish the sweet version with a tablespoon of crushed almonds or pistachios.
For a healthy lassi, whisk the mixture with 2 tablespoons of pureed fruit.
Amar al Din- Apricot juice
Get those pressed Apricot sheets from the grocery store (they are normally sold in yellow cellophane paper and are widely available during Ramadan, but even now you can find them)
Cut the Apricot sheets into thin strips and cover with cold water. Soak them until the strips dissolve.
Strain away the solid pieces and sweeten the juice to taste.
Bottle and refrigerate.
Dilute with chilled water when you want to drink it.
Watermelon Cocktail
Cut watermelon into small cubes and deseed.
Sprinkle some lemon juice and sugar on top.
Add a few shredded mint leaves.
Cover and chill.
Serve in cocktail glasses as is or after pureeing the mix.
Garnish with a sprig of mint.
Fresh Juices
There are a wide variety of fruits available in the market. You can prepare fresh juices by pureeing the flesh of these fruits, adding sugar to taste and diluting with water or milk.
Remember : Citrus fruits don’t go very well with milk.
Try out some combinations on your own and maybe next year, you could be writing your recipes for the Oasis J

Egyptian Etiquette for Eating
The article (appended below) is quite in line with my own experiences in this country.
When I first had Egyptian guests over, I was aghast when they left substantial portions of food on their plate. I thought they did not enjoy the food and it was unappealing to them. Another Egyptian friend explained to me, that leaving food on the plate was a sign that the host had been generous.
In India where I come from, food is served in a semi-buffet kind of system. The dishes are placed in the center and guests serve themselves or the hostess serves them individually while the guest motions whether they would like a little more or if it has been enough. This is completely unlike the Western system of serving plated food to guests.
Think of an Indian meal as a barbeque setting. Serve yourself and eat with your hands - no cutlery. Although the British did leave behind the use of cutlery during the occupation, forks and spoons aren't commonly used except in formal settings. Food is supposed to be more tasty when eaten with the fingers. It eliminates the taste of metal or plastic in your mouth. Plus certain Indian foods like dosas and rotis are not conducive to eating with a knife and fork.
In the Indian scenario, the larger the variety of items on the table the more hospitable you have been. In meat eating families, at least 3 varieties of meat are served at a meal where guests have been invited. Also when guests are invited over. There should be food to spare in the serving dishes.
One is supposed to eat up everything that is put in one's plate. To leave behind large quantities of food on the plate is considered rude towards the hostesses culinary abilities or a sign of bad upbringing. Most Indian children have grown up with the refrain "Eat everything that is put on your plate, do you know how many children are starving in the world and go to sleep without a single square meal?"
Hence the horror at the quantity of food left behind by my Egyptian guests. I was truly worried that even the hint of spices I had used, was too much for them. Fortunately my friend explained that to me.
Most Egyptian guests will bring over some kind of sweet dish, when invited to your house. A large cake, chocolates or pastries. Budget for these arrivals in your dessert plans. It is quite acceptable to offer the sweets that have been brought in by your guests at the dessert table at the same meal.
Another tip I have learned where food is concerned is that the serving of Shai (black tea) signals the end of the evening. So definitely offer your Egyptian guests some shai to end the meal. Not too quickly after dessert - that will imply that you are trying to get rid of them, but after a little time has passed. And if you have been served shai in an Egyptians house, then it is time to politely take your leave once the shai has been drunk.
and as mentioned in the article below, Egyptians are quite forgiving of khwagas (foreigners) who aren't completely aware of their social etiquette, so don't worry too much about being Emily Post :)
Avoid the Evil Eye

When it comes to table manners, the devil is in each culture's details. Eating with one's fingers may be considered slovenly in one place, but the norm in another. In Egypt and other parts of the Middle East, looking at a fellow diner's plate is considered to be rude.
Cairo native Amr Ragab explains that when someone stares at another person's food, he or she sends a signal of desire and envy. That act of acknowledging what another person owns can bring bad luck: the antidote is to offer to share. "I'm afraid if I don't give you any," says Mr. Ragab, "I'll get the evil eye."

The idea that attention to success can bring about failure is widespread in cultures from South and Central America to Asia and across the Middle East. The sudden misfortune that is said to come with this attention is commonly called the "evil eye." Tourists can often find kitschy amulets shaped like eyeballs and made of blue-and-white glass in Turkey, North Africa, Israel and the Persian Gulf. Their popularity may make the belief seem rather frivolous, but its roots are deep and its influence is still expressed in this detail of Egyptian dining etiquette.
Sometimes, though, it's hard not to look at what someone else has ordered.
"The way I do it, I look but I try not to stare at the plate," Mr. Ragab explains. "I'll look for a second but I won't let my eyes linger. If I get caught I'll say 'Ah, that looks nice!' "
At that point, the offer of food from the plate in question will most likely be extended, and a second, important part of the cultural practice comes into play.
"I know that if he's obliged to give me, I feel obliged to say no a couple of times," Mr. Ragab says. "You refuse it at least once and people even say twice, but you have to eventually take some, otherwise you're saying it's bad, you don't like it."
Amy Riolo, an American food historian who has studied Middle Eastern cuisine and is married to an Egyptian, remembers that it took her a few tries to get the hang of this modest back-and-forth exchange. "I would offer someone something and they would refuse and then I would take it back, but they were waiting for that third offer."
There is one paradox, though: While it is considered impolite to look at another's plate in a restaurant, it is acceptable to do so in the home. This is because the same food is shared and eaten family-style, says Mr. Ragab, so there is no comparison to wealth.
Whether the meal is at home or in a restaurant, never leave a clean plate. When dining as a guest in an Egyptian home, this is an especially important thing to remember. "If there isn't any more food on the table, then the assumption is that they haven't been generous enough," warns David Mack, a former who studied in Egypt before embarking on a 30-year career in the Foreign Service. "They may leave you sitting there while they desperately go to the neighbor's for something else."
A guest signals that he or she is full by leaving a little of each kind of food on the plate.
For the confused traveler, Egyptians thankfully have etiquette on etiquette: "Even though Egyptians have their own etiquette rules," says Ms. Riolo, "they're very gracious about letting foreigners bend them."
